Number of persons
For the beet fries:

4 beets, preferably raw or cooked.

Frying oil
For the zucchini sautéed Provençal style:

4 zucchinis

2 cloves of garlic

Flat-leaf parsley

Olive oil
For the candied potatoes:

8 ratte potatoes

1 tablespoon brown sugar

1/2 glass of port

Half-salt butter

Olive oil

4 spice blend
For all these vegetables, plan:

For beet fries, proceed like potato fries, tasting one fry to your liking. Season with salt and pepper (ground black pepper and white pepper).
Ideal for poultry and white meats!
For fried zucchini, cut them into thin slices keeping the skin, then sauté them in a frying pan with a glass of steaming olive oil. Stir well at the beginning of cooking to grease all the slices. They are cooked in 10 minutes or more according to your taste.
Season with salt and pepper at the end of cooking and add finely minced garlic and chopped flat-leaf parsley.
Ideal for fish, such as salmon, game...
For the candied potatoes, cut them into slices, sauté in a glass of olive oil with 50 g of semi-salted butter and sugar, 1/2 teaspoon of 4 spices for 20 min until coloured over medium heat, shaking the pan regularly to loosen from the bottom without damaging the vegetables.
Deglaze the potatoes with the port, and simmer covered for another 10 min.
Ideal for duck breasts, beef fillets, ostrich fillets, ribs...
