Number of pizzas
For the pizza dough:

250 g flour

1 sachet of baker's yeast

5 tablespoons of olive oil

2 pinches of coarse salt

12.5 cl of water
For the garnish:

6 tomatoes

1 zucchini

1 eggplant

1 yellow onion

200 g artichoke hearts

1 scoop of mozzarella

12 black olives

Preparation: 30 min
Cooking time: 20 min
Prepare the pizza dough:
Pour the flour into a bowl and dig a well.
Add the yeast diluted with a little hot water and cover with a little flour.
Leave to rest for 20 minutes.
Add the water, olive oil and salt.
Work by hand until the dough comes away from the sides of the bowl.
Sprinkle with flour and leave to rest for 1 hour.
Prepare the filling:
Peel 4 tomatoes, remove the seeds and cut them into pieces and cook them with the chopped onion in olive oil.
Reduce the mixture and season with salt and pepper.
Cut the aubergines into cubes and fry them in a pan.
Wash and cut the courgettes, the remaining tomatoes and then the mozzarella into thin slices, the artichoke hearts in half.
Preheat the oven to 250°C (gas mark 8-9).
Roll out the pizza dough quite thinly.
Garnish with the tomato and onion sauce and place the vegetables, mozzarella and olives on top.
Season with salt and pepper and drizzle with olive oil.
Put in the oven for 20 minutes.
Serve alone or with a few salad leaves.
