2 medium zucchini, or 3 small zucchini

8 tomatoes

375 g of mozzarella or 3 balls

2 cooked red beets

1 tablespoon balsamic vinegar

3 tablespoons of olive oil

1 pinch of cumin

1 pinch of herbes de Provence

Salt

Pepper

Preparation time: 20 min
Cooking time: 10 min
Prepare the courgettes a little in advance by cutting them into cubes, then steaming them with cumin and Provençal herbs.
The cooking time depends on your pressure cooker, but about 2 to 3 minutes are enough to get the courgettes still crunchy. Once cooked, put them in the fridge for an hour.
For the preparation of the salad :
Arrange the diced courgettes on the plate, then the diced tomatoes and beetroot, then the diced mozzarella.
Salt, pepper, herbez de Provence!
and sprinkle with balsamic vinegar and olive oil ...
