Ingredients apples au gratin
Number of persons

1 kg of mixed apples (golden, reinette queens, elstar, canadian grey reinettes,...)

4 tablespoons of brown sugar (or brown sugar)

2 tablespoons icing sugar

30 g semi-salted butter

1 sachet of vanilla sugar or 3 pinches of cinnamon (according to taste)

5 cl of apple juice or water, with a cap of calvados added

Cooking time: 40 min
Preheat the oven to 200°C (thermostat 6).
Peel, seed and quarter the apples. Cut them into slices.
In a gratin dish (ideally a terracotta dish), mix the apples, sugar and vanilla (or cinnamon).
Even out the surface a little, pour in the liquid with calvados and sprinkle with butter in patches. Put in the oven.
Every 5 minutes, mash the top with a fork to bring up the juice.
5 min before the end of cooking, sprinkle lightly with icing sugar and leave to caramelise under the grill (be careful, it burns very quickly).
Serve lukewarm, on its own or with thick crème fraiche or vanilla ice cream.
