250 g shortcrust pastry
200 g of vergeoise or cane sugar
3 eggs
2/3 can of beer
35 g soft butter

For this recipe, use a light beer (lager) instead, which will add its discreet bitterness to this dessert, without overpowering it too much.
Garnish a mould with the pastry and spread the vergeoise over the tart base.
Beat the whole eggs with the beer in a bowl then pour over the vergeoise.
Sprinkle with small pieces of butter before putting in the oven for 35 minutes at 210°C (gas mark 7).
