Number of persons

1 chicken from 1.3 to 1.4 kg of Bresse cheese

25 cl of yellow wine from Château-Chalon or other vineyards

50 cl fresh cream

20 g butter

Fine salt and pepper

400 g fresh morels or 200 g dried morels

Cooking time: 45 min

Choose a Bresse chicken, cut it into four pieces. Season these pieces with fine salt and pepper, put them in a frying pan and brown them in butter.

Once the pieces have coloured a little, degrease, add the morel mushrooms, sweat with the chicken and deglaze with the yellow wine. Leave to cook with the lid on for a few minutes, put the crème fraîche on the pieces and leave to cook for 30 to 40 minutes.
Correct the seasoning, once cooked, remove the pieces and leave to reduce by the fire. In order to finish cooking do not cover. Serve in timbale or on a plate. Put a drop of yellow wine on the chicken pieces just before serving.
