335 g flour

165 g caster sugar

4 egg yolks + 1 egg white

200 g semi-salted butter


Preparation breton sandblasted cake

Preparation time: 20 min
Cooking time: 50 min
Preheat the oven to 150°C (thermostat 5).
Sift the flour onto a work surface and stir in the egg yolks and sugar using your fingertips.
Place the sugar and the 3 egg yolks in the centre.
Mix the egg yolks and sugar with your fingertips, gradually adding the flour.
Knead and incorporate the butter cut into pieces.
Form the dough into a ball, place it in a buttered 20 cm diameter mould and spread with the palm of your hand.
Brush the surface with the beaten egg white and decorate with dashes.
Bake for 50 minutes.
