Ingredients breton style perch fillets
Number of persons 

4 perch fillets

1 jar of sea beans (seaweed) that you can find in a delicatessen store

4 shallots

3 tablespoons of low-fat butter

10 cl low-fat whipping cream

1/4 raw cider

Fleur de sel

Pepper from the mill



Preparation breton style perch fillets

Preparation time: 10 min
Cooking time: 30 min
Melt the butter in a frying pan with high edges.
Melt the shallots over very low heat.
When the shallots are well melted, place the 4 fillets of perch. Season with salt and pepper. Brown the fillets on each side (5 min on each side).
Drizzle with the cider. Cover and cook over low heat for 10 min.
In the meantime, wash and drain the sea beans.
Put them on the fillets without mixing, then drizzle with liquid cream.
Add the thyme and chives (preferably fresh).
Leave to cook for 10 minutes on a medium heat.
You can serve this dish with steamed apples or fresh pasta.
