(!! attention 5 hours of rest in total for the dough !!!).
Dissolve the yeast in a little warm water with 50 g flour and a pinch of sugar. Leave to rest for 1 hour in a warm place.
In a salad bowl put the rest of flour, sugar, melted and cooled butter, beaten whole eggs, orange blossom water, grated orange zest. Mix well and add the leaven evenly and beat with the palm of your hand for at least 5 minutes.
Put the dough into a ball in a bowl, cover with a tea towel and leave to swell for 3 hours in a warm place.
Take back the dough and quickly mix the candied fruit cut into cubes.
Separate the dough into 2 regular balls. Press your fist in the middle of one ball to make a hole and enlarge the hole by stretching the dough to form a cylindrical sausage.
Place on an oiled baking sheet and leave to rest for another hour.
Brown with beaten egg and bake in a preheated oven at 150°C for 15 to 20 minutes, with a bowl of water to humidify the air in the oven. Watch the end of cooking.
Garnish the cold cake with whole candied fruit that can be lacquered with sugar syrup (but this is not mandatory), you can also sprinkle with granulated sugar.
Don't forget to put a bean and a subject in the bottom of the cake and to provide the crowns.
