150 g sugar
150 g fresh cream
100 g semi-salted butter

Melt the sugar (dry, without adding anything to it) over medium heat. Do not take your eyes off it, otherwise you will miss the caramel.
When it begins to caramelize and turn brown (light brown), add the crème fraiche and bring to a boil (small stock).
When the mixture is homogeneous, add the semi-salted butter cut into small cubes. Leave to cook over a very low heat until the butter is completely melted. Remove the pan from the heat.
Put in jars and keep in the fridge!
