6 onions (or 10 small ones)
1 puff pastry
50 g soft butter
20 cl semi-thick fresh cream
1 egg
100 g grated Emmental cheese
Nutmeg powder
Salt
Pepper
Preparation Caramelized Onion Pie

Cooking time: 20 min
Thinly slice the onions then sweat them in butter.
Cover and let them melt over low heat for about 20 minutes.
When they are translucent, remove them from the heat.
In a large bowl, beat the egg with the crème fraîche.
Salt, pepper, add a little nutmeg to taste (be careful, nutmeg powder has a lot of taste).
Pour the mixture over the cooked onions and mix.
Preheat your oven to 180°C (gas mark 6).
Spread the puff pastry in a pie dish, fold the edges and fill with the egg/cream/onion mixture.
Cover with grated cheese and sprinkle with a few knobs of butter.
Bake the tart in the oven and after 15 minutes of baking, switch to the grill mode for a further 5 minutes.
Be careful not to let the cheese burn.
Once your tart is golden brown, serve it hot or warm with a salad.
It goes particularly well with endives and walnut kernels, but a classic green salad will also do the trick.
