1 roast beef with bacon between 800 g and 1 kg

2 onions

1 clove of garlic

2 teaspoons of sugar

25 g butter

5 tablespoons of milk (if not water)

1 tablespoon walnut oil (optional)

Take the roast out of the refrigerator 30 minutes before preparation and let it air out.
Cut the garlic into thin slices.
With a fine, sharp knife, make small incisions in the roast and slide the garlic slices into the roast.
Brush the whole roast with a piece of butter.
Mince the onions.
Melt half the butter and oil in a pan over high heat and fry the onions with the sugar.
Add the herbs.
Once the onions have browned, quickly toast the roast on both sides with the onions and remove.
Place the roast in an ovenproof dish and place the caramelized onions on top.
Place in a preheated oven at 250°C (gas mark 8-9) and cook for 10 minutes.
Remove from the oven, deglaze with milk and pepper and cook for another 10 minutes. Adjust the cooking time according to your preference: well-cooked or rare meat.
