50 g wheat flour

125 g cane sugar

3 farm eggs

1 sachet of baking powder

125 g dark chocolate for cooking

125 g semi-salted butter

125 g canned cooked chestnuts

Preheat the oven to 200°C (thermostat 6-7).
In a bowl, puree the chestnuts in a manual potato masher to a coarse purée. Add flour, sugar, baking powder and then the eggs one by one. Set aside.
Melt the chocolate in the microwave: to do this, take a pouring bowl, put the chocolate in pieces, cover with water and heat for 2 minutes.
Remove the excess water by tilting the bowl and add the butter.
Return to the microwave for 45 seconds.
Stir until the mixture is smooth.
Pour the chocolate mixture over the flour, chestnut and egg mixture. Mix with a wooden spoon.
Pour into a buttered springform pan.
Bake for 5 - 10 minutes at 200°C (gas mark 6-7) then 5 - 10 minutes at 160°C (gas mark 4).
For baking, test by inserting a knife blade: lightly chocolatey knife for a chocolate-chestnut fondant or dry knife for a well-baked cake.
Turn out of the mould onto a nice dish and decorate with icing sugar and fresh red fruit.
