Ingredients chicken curry with peanuts
Number of persons

2 teaspoons of oil

700 g chicken breast , cut into pieces



250 g thawed frozen mixed vegetables (e.g. pepper + corn cobs + peas + beans)
For the sauce:

35 cl coconut milk

12.5 cl unsalted chicken broth

1 tablespoon curry paste (or curry powder)

8 cl peanut butter

2 tablespoons brown sugar

2 tablespoons lemon juice

Preparation time: 20 min
Cooking time: 20 min
Heat the oil in a large frying pan.
Add chicken pieces, salt and pepper.
Sauté until chicken is cooked through, turning occasionally, for about 5 minutes.
Add vegetables and continue cooking for 3 minutes.
While the chicken is cooking, prepare the sauce:
In a small bowl, whisk together all the ingredients needed for the sauce.
Pour the sauce in the pan over the chicken and vegetables.
Bring to a boil, stirring occasionally.
Reduce heat and simmer for 6 to 8 minutes until sauce thickens slightly.
Serve with coconut rice pudding or plain rice.
