8 chicken drumsticks (lower thigh)

1 large handful of peanuts

4 sugar cubes

1 onion

30 cl coconut milk (25/30cl)

2 large tablespoons peanut butter (optional)

In a large frying pan (or stewpot), brown the chicken drumsticks on a bed of sliced onions, and in a bottom of salted and peppered water to taste. Over low heat...
No need to add oil, the fat of the meat will melt in the juice little by little...
After 7/8mn, add half of the finely chopped peanuts, with the sugars (as well as the peanut butter if you have any).
Mix well in the bottom of the pan with a wooden spatula, and turn the drumsticks so that they are dressed with the sauce.
Always on low heat...
If it sticks a little, add tablespoons of water.
6/7 min later, finalize the sauce by adding the coconut milk, and the rest of whole peanuts. Stir the base well with the spatula so that the sauce mixes.
Cover and cook over a low heat for 10 to 15 min max, turning the drumsticks regularly in the sauce base.
Make sure that the heat is very low throughout the cooking process.
