Number of persons

500 g Chinese noodles

1 small seedless chilli pepper (or a dash of powdered cayenne pepper)

1 clove of garlic

1 ginger

20 cl coconut milk

4 tablespoons of peanut butter

1/2 lime or yellow lemon (juice and zest)

1 tablespoon soy sauce

1 onion

10 g peanuts

1 dash of sunflower oil

1 pinch of salt

1 pinch of pepper

Cooking time: 10 min
Seed the chilli pepper and chop it finely.
Heat a little oil in a saucepan.
Press the clove of garlic over the pan and do the same with the piece of ginger.
Add the chilli pepper (the one you have just chopped or the tip of ground cayenne pepper). Sauté the garlic, chopped ginger, and chili pepper 2 min over medium heat.
Add the small carton of coconut milk. Stir, once the milk is hot enough, add the peanut butter. Keep stirring so that the peanut butter melts completely.
Over low heat, add the juice and zest of half a lemon and the soy sauce. Season with salt and pepper if necessary, to taste. Cover the pan and turn off the heat.
Prepare the Chinese noodles.
While they are cooking, cut the onion into thin strips. Fry and grill them in a little butter.
In the meantime, mash some salted peanuts.
Drain the noodles, put them in the sauce pan, stir and reheat.
Arrange the noodles on the plates and sprinkle them with the grilled onion slices and peanut chips.
