For the dough:

250 g flour

125 g butter

40 g sugar

1 sachet of vanilla sugar

5 cl milk

Salt
For the cottage cheese:

500 g of cottage cheese

10 cl fresh cream

3 eggs

40 g cornstarch

135 g sugar

1 sachet of vanilla sugar

Cooking time: 40 min

Mix 250 g of flour with 125 g of diced butter.
Add 40 g sugar, 1 vanilla sugar, 1 pinch of salt and, little by little, 5 cl milk.
Roll the dough into a ball and leave it to rest in a cool place for half an hour.
Flatten the dough and fill a lightly buttered 25 cm diameter springform pan. Prick the bottom with a fork.
Set aside in a cool place.
In a bowl, mix 500 g curd cheese (40% fat content), 1 dl fresh cream, 3 egg yolks, 40 g cornflour, 135 g sugar and 1 vanilla sugar.
Whisk the egg whites until stiff and fold into the curd mixture with a spatula.
Pour the mixture over the dough.
Bake in a preheated oven at 200°C for 40 min (or for a combination oven: 200°C / microwave = hold for 21 min).
Take out the mould and wait 5 min... before placing a rack on the mould and turning the whole thing over.
Remove the mould and leave the tart to cool upside down for 5 to 10 min (to keep the fromage blanc firm).
Finally, turn the tart over and present it on a serving dish.
