100 g semi-salted butter (at room temperature)

150 g grated county

150 g flour

2 tablespoons golden sesame seeds

Black pepper (optional)

Cooking time: 15 min
Pour the flour into a salad bowl. Add the diced butter, Comté cheese, pepper and sesame seeds. Knead by hand and knead the dough into a ball. Cover and leave to rest for 30 minutes in a cool place.
Preheat the oven to 180°C (gas mark 6). Roll out the dough with a rolling pin to a thickness of about 3 mm. Cut out shapes with a cookie cutter (or cut squares with the blade of a knife). Place them on a baking tray covered with baking paper and bake for 15 minutes. Let cool on a wire rack before storing in an airtight box.
