100 g sugar

80 g liquid cream

30 g semi-salted butter

1 pinch of fleur de sel

Make a dry caramel with the sugar, taking care not to burn the caramel.
Boil the cream and add it to the caramel.
Mix well, return to low heat and thicken.
Remove from the heat, add the butter and the fleur de sel, making sure to add it to the caramel.
