400 g leek

1 log of goat cheese

100 g flour

100 g semi-salted butter

50 g grated Emmental cheese

Fresh cream

Pepper

Salt

Cooking time: 20 min
Cook the leeks in a little olive oil for 20 minutes, add a little salt (the cheese already gives a salty taste), pepper and a dash of cream. Set aside.
Prepare the crumble dough by mixing the flour, butter and Emmental cheese.
Arrange the ramekins with a layer of goat cheese slices (not too thick), a layer of leeks and then the crumble dough.
Brown in a hot oven at 180°C (gas mark 5) for 15 to 20 minutes.
