1 ready-to-use shortcrust pastry

1 kg of apple (royal gala or pink lady)

50 g semi-salted butter

75 g sugar

2 egg yolks

1 sachet of vanilla sugar

Cinnamon powder

Cooking time: 45 min
Peel and cut the apples into quarters and then into regular slices (not too thin so that they will hold during cooking).
Preheat the oven to 180°C (gas mark 6).
Melt the butter in the pan. Add the apple slices and 30 g of sugar. Leave to cook for 10 minutes, taking care to brown all the slices.
Arrange the shortcrust pastry in a tart tin.
In a bowl, beat the egg yolks, the remaining sugar, a sachet of vanilla sugar and powdered cinnamon.
Arrange the cooked apples on the pie crust. Then, using a spatula, cover the apples with the egg yolk mixture.
Bake in a hot oven for about 30 minutes.
