Ingredients Fish with Fennel Confit
Number of persons

4 fish fillets of your choice

1/2 onion

1/4 fennel


125 g semi-salted butter

Pastis (3 caps)

Cooking time: 30 min
1) Cut the fennel and onion into thin strips.
Brown them in a pan in a little butter to make them candy 15 to 20 minutes over low heat, stirring regularly.
2) Add the pastis and 5 chopped basil leaves and 6 corks of water. Leave to evaporate for 10 minutes.
3) Mix the sauce in the pan.
4) Mount, by small pieces of butter, the sauce on low heat. Do not salt, the semi-salted butter takes care of it. Keep warm.
5) Cook your fish in the oven or other.
4) Put the dish with the fish and the fennel confit sauce and two basil leaves.
