800 g dab

4 leeks

50 g semi-salted butter

4 shallots

1 lemon

10 cl dry white wine

20 cl fresh cream

Pepper

Salt

1 teaspoon of curry (depending on strength)

Cooking time: 25 min
Sponge the dab fillets and lemonize them lightly.
Wash and sponge the whites of the leeks, then slice them very finely.
Butter a baking dish and arrange the fillets of dab and the whites of leeks, alternating a layer of each.
Sprinkle with a trickle of lemon juice and place in a preheated oven at 200°C (gas mark 6/7) for about 10 minutes.
In the meantime, peel and finely chop the shallots. Put them in a saucepan, add the white wine and bring to the boil.
When the liquid has almost completely evaporated and the shallots are stewed, add the crème fraîche and curry.
Mix while stirring over low heat, add salt and pepper.
Take the dish out of the oven and coat its contents with the sauce, then put the dish back in the oven by lowering the thermostat to 180°C, then continue cooking for about 15 minutes.
Serve very hot.
