20 fresh sardines

3 eggs

150 g semi-salted butter

2 tablespoons of flour

2 tablespoons chopped parsley

1 lemon

1 pinch of salt

1 pinch of pepper

Empty and shell the sardines, keeping the head. Wipe them gently.
Harden the eggs 10 min in boiling water. Collect only the yolks. Crush them with a little water to obtain a fluid paste.
Turn the sardines carefully in this paste. Roll them one by one in the flour spread out on a plate and align them while waiting to cook.
Fry in 2 times so that the sardines don't stick together. Each time in about 25 g of butter, turning them gently so as not to damage the beautiful golden crust that has formed. Don't forget to add a little salt and pepper.
At the same time melt the rest of the butter with the lemon juice, salt, pepper and chopped parsley.
In a dish, preferably a little hot, arrange the sardines in staggered rows to form our castle. Sprinkle with the melted butter and serve immediately.
