2 handles of chanterelle mushrooms

2 cloves of garlic

Beat the eggs into an omelette with a fork, the more beaten, the better the omelette will be!
Add salt and pepper to taste.
Add the chopped parsley.
Rinse the chanterelles in clear water, without letting them "soak" and cut off the sandy foot (not too much anyway).
Fry the chopped garlic over a low heat in salted butter (half salt is also good) until transparent (it should not toast).
Coarsely chop the chanterelles and fry them with the garlic, then turn up the heat (high at first, then medium).
Sweat the mushrooms.
When they are cooked, and there is no more water in the pan, add the seasoned egg mixture and cook over a low heat.
Once the omelette is cooked to your liking, fold in half and serve with a large green salad.
