For the pie dough:
250 g flour without lumps
125 g soft butter
1 dl of water approx.
For the trim:
4 fresh and juicy yellow lemons
150 g caster sugar
4 medium eggs
60 g soft butter
Preparation lemon pie

Cooking time: 40 min
Mix the flour and butter by hand so as to obtain a fairly fine homogeneous sand. Add the water to bind it all together.
Form a homogeneous ball with the dough obtained
Spread this dough on a floured work surface and place it in a large lightly buttered pie tin. It is very easy to transport this dough to the pan!
Extract the pulp and juice from the lemons and puree it. (Be careful to remove the seeds!).
Mix this puree with sugar and whole eggs.
Also add the melted butter.
Pour the filling into the pan. Don't worry about it looking a bit runny, it thickens when baking.
Put in a preheated oven at 180°C for 40 minutes.
