For the base:

225 g of flour

65 g cane sugar

150 g soft semi-salted butter

Oil for the mould
For the lemon cream:

150 ml lemon juice

twist of lemon

6 egg yolks

125 g sugar

100 g butter

Preparation lemon squares

Preparation time: 45 min
Cooking time: 20 min

Preheat the oven to 180°C or 165°C (fan heat) and plan to take a 23 cm square mould.
Oil your mould.
Start preparing the base:
In a large bowl, mix the flour and sugar.
Add the diced butter and fold it into the mixture with your fingertips.
Pour the dough into the pan and press it gently with your fingers to spread it evenly.
Bake for 12 to 15 minutes, until the dough is blond. Leave to cool.
Meanwhile prepare the lemon cream.
Pour the egg yolks, zest and juice together in a bowl, gradually add the sugar and beat.
Pour the mixture into a saucepan and heat it over low heat for 2 minutes, until the sugar is dissolved.
Gradually add the butter, stirring continuously, and cook for another 15 minutes, until the mixture thickens. Remove from the heat, wait until the mixture cools.
Pour the cream over the cooled base, then smooth the surface.
Put the pan in the fridge for at least 3 hours.
Cut into squares and serve.
