200 g flour
125 g sugar
1 egg
1 sachet of vanilla sugar
100 g cold soft butter
Light lemon cream
5 eggs
200 g sugar
1 lime (40 cl juice with pulp)
20 g butter
Preparation light lime pie
Total time: 30 min
Preparation time: 15 min
Cooking time: 15 min
For the shortbread dough:
Place the sugar and egg in the mixer bowl until the mixture whitens.
Add the flour and blend for 30 seconds.
Add the butter and blend for 30 seconds.
Put the dough in a ball in the fridge for 1 hour.
Preheat the oven to 180°C (gas mark 6).
Spread the dough in a buttered tart tin.
Bake the tart base for 15 minutes.
Light lemon cream:
During this cooking time, whisk together the eggs, lemon juice and sugar in a saucepan off the heat.
Place in a bain marie and stir continuously until the mixture thickens.
Remove from the heat and add the butter.
Put this cream on the still hot pie crust.
Leave to cool and then put in the fridge.
Serve well chilled.
