Ingredients light pear omelette

2 eggs

2 pears

100 g brown sugar

3 tablespoons icing sugar

1 pinch of 4 spice mix (or cinnamon or other spice that goes with the pear)

15 g semi-salted butter

Cooking time: 20 h
Peel the pears and cut them into strips (lemon if possible).
Brown them in butter, sprinkle with brown sugar, until they are melting and slightly caramelized.
Beat 1 egg white to a stiff peaks.
Beat the yolk and the other egg, add the 4 spices mixture, possibly sugar again according to your taste.
With a maryse, add the egg white to the beaten eggs, then pour over the pears and spread well.
Cover and leave to cook for a few minutes in a frying pan.
Sprinkle with icing sugar or spices or chocolate, or coat with salted butterscotch and serve.
