115 g flour

125 g butter

100 g semi-salted butter

50 cl milk

1 vanilla bean

For this recipe, you will need a 22 cm diameter mould that is high enough.
Preparation of the caramel:
Cut the salt butter into small cubes and mix it with the fresh cream. Heat the crème fraîche and the butter in the microwave for a minute or two. Add the fleur de sel to the mixture.
Pour 200 g of sugar into a medium saucepan over low heat.
Wait until the caramel starts to take on its amber colour before mixing it in and add the still warm butter-fresh cream mixture.
Continue mixing to obtain a caramel cream and set aside.
Preparation of the cake :
Preheat the oven to 150°C (without fan heat).
Melt the butter in the microwave.
Clarify the eggs and reserve the whites. In a salad bowl, blanch the egg yolks with the remaining 150 g of sugar.
Once the egg yolks are blanched, add in order: melted butter, flour, tablespoon of water, milk, caramel, vanilla bean seeds.
Whisk the egg whites until stiff. Incorporate the egg whites into the rest of the preparation without crushing them too much.
The cream will be very liquid and you will have the impression of having lumps that float, but this is normal.
Pour this preparation into a mould and put in the oven for 45 to 50 minutes.
Cooking can take more than 50 minutes depending on the ovens, it is important to use the consistency of the heart (heart trembling and not making a big wave).
Once baking is complete, let the cake cool before putting it in the fridge for at least 4 hours.
Tip: Add soft caramel shavings (or small cubes), chocolate chips or small apple cubes to the preparation.
Serve with a homemade caramel sauce.
