Mint Chocolate Brownie

For the brownie:

100 g semi-salted butter

250 g of chocolate

250 g sugar

3 eggs

1 teaspoon vanilla extract

100 g flour

1 pinch of salt
For the mint diaper:

220 g fresh cheese

50 g sugar

1 egg yolk

1/2 teaspoon mint (or mint syrup)

120 g of chocolate

Preparation Mint Chocolate Brownie

Preparation time: 30 min
Cooking time: 40 min

Preheat the oven to 180°C (thermostat 6).
In a saucepan, melt the chocolate and butter. Stir well and let cool to room temperature once the chocolate has melted.
Add the sugar and then the eggs one by one, making sure that the egg is well incorporated before adding the next one.
Add the vanilla, flour and salt. Mix well.
Pour 3/4 of the batter into a buttered baking pan.
Prepare the mint cream.
Beat the fromage frais with the sugar, egg yolk, mint extract (or mint syrup) and colouring.
Mix until smooth and homogeneous.
Stir in the chocolate chips.
Pour the mixture over the brownie batter.
Cover with remaining chocolate mixture.
With a baguette or the tip of a knife, draw spirals in the dough to mix the 2 pasta.
Bake for 40-45 minutes.
Let cool and cut into small squares to serve.
