12 hollow oysters

Snail butter (homemade or purchased)

Breadcrumbs

10 cl liquid cream

Open the oysters and empty them of their water. Let them rest until they make their "second" water, which you will also empty.
Place a knob of snail butter in the oysters (according to your taste but try not to spoil the taste of the oyster). Half a teaspoon is sufficient. Cover each oyster with breadcrumbs and place them on a rack with the oven in the broiler position.
Wait until the breadcrumbs are golden brown (usually 5 min), take the oysters out of the oven and add a dash of fresh cream on top and serve lukewarm.
The quantity of oysters per person depends mainly on the size of the flesh.
Prefer hollow oysters, "special" oysters which have a stronger taste than over-aged oysters.
