Peanut Pie

Ingredients Peanut Pie

For the dough:

250 g flour

125 g butter

50 g caster sugar

1 egg yolk
For the trim:

80 g softened butter

175 g peanut butter

2 egg yolks

75 g caster sugar

200 g curd cheese

40 cl whipping cream

50 g caster sugar

1 teaspoon vanilla extract
For decoration:

Redcurrant or raspberry jelly

50 g unsalted peanuts, chopped

Cooking time: 20 min
In a bowl put the flour with the butter cut into small pieces.
Mix with fingertips to obtain a sandy mixture.
Add the sugar, the egg yolk, 1 pinch of salt and 2 to 3 cl of water.
Knead and roll the dough into a ball.
Leave to rest for 15 minutes.
Roll out the dough and line a buttered pie dish.
Bake for 20 minutes in the oven th 6 or 180°C.
In another bowl mix the butter with the peanut butter, egg yolks and brown sugar.
Add the fromage blanc until smooth.
Whip the whipped cream. Stir in the sugar and vanilla extract.
Mix the whipped cream with the peanut mixture.
Garnish the pie crust with the peanut mixture.
Add a thin layer of redcurrant or raspberry jelly and decorate with chopped peanuts.
Leave to rest for 1 hour in the fridge.
