400 g eggplant

500 g tomato

300 g courgette

1 onion

6 cloves of garlic

50 g butter

1 spoonful of olive oil

Cooking time: 1 h

Preheat the oven to 180°C (thermostat 6).
Butter an oval baking dish.
Peel the garlic cloves and onion.
Cut the onion and one of the 5 cloves of garlic into small pieces.
Bake the onion in the oven for 5 to 10 minutes, with the onion in pieces and the pieces of one clove of garlic. Then let the dish cool down a little.
Wash the vegetables, then cut them into slices of the same thickness and if possible the same diameter.
Arrange them in the dish, on top of the oven-baked garlic and onion, standing in successive rows: tomato, zucchini, tomato, eggplant and so on; insert the 5 remaining cloves of garlic.
Season with salt and pepper, sprinkle with olive oil, and sprinkle with Proven├žal herbs.
Put in the oven for 1 h 30.
