For the cakes:

430 g flour

430 g sugar

220 g butter

35 cl milk

6 eggs

1 sachet of yeast

twist of lemon

Cooking time : 1h30
For the cake:
Soften the butter.
Whisk the sugar with the eggs until white.
Mix the butter and the egg/sugar mixture together.
Add the flour sifted with the baking powder.
Add the milk and lemon zest and mix well.
Separate the mixture into 6 equal parts.
Add the drops of food colouring in each part to obtain the colours of the rainbow: Purple, Blue, Green, Yellow, Orange, Red.
Do not hesitate to force the dose of color because cooking makes it a little lighter.
Bake each cake one after the other for 13 min at 170°C (thermostat 6).
Icing:
Mix the mascarpone with the Philadelphia, icing sugar and lemon juice (to be dosed to obtain a soft but not liquid paste).
When the purple cake is cooked and cooled, place it on the serving dish and spread a layer of icing over it. Place the blue cake on top, then the icing and so on with all the cakes.
Finish the icing by covering the edges.
For the top I chose a white chocolate icing but you can also keep the same icing as for the edges.
Melt the white chocolate, add water to get a soft dough. Add the philadelphia and spread over the top.
Leave to set in a cool place for at least 3 hours (ideally overnight).
