1 kg of rhubarb

300 g brown sugar

125 g flour

125 g semi-salted butter

60 g oat flakes

125 g caster sugar

Ground cinnamon or ginger

Cooking time: 50 min
Peel and cut the rhubarb into chunks. Place them in a buttered baking dish. Sprinkle with brown sugar and mix well. Let rest at least 30 minutes.
Preheat the oven to 200°C (thermostat 6-7).
Cut the cold butter into pieces and mix it with your fingertips with the flour, oats and sugar. If necessary, add a little cinnamon or ginger. Crumble the dough, which should be sandy, and spread it over the rhubarb.
Put the crumble in the oven and leave to cook for 40 minutes. Turn the oven down to 180°C (gas mark 6), and cook for another 10 minutes before serving warm.
