For the cracker:

80 grams of butter

80 g flour

80 g brown sugar
For the choux pastry:

125 g of milk

57 g butter

3 g salt

3 g sugar

70 g flour

3 eggs
For the salted butterscotch:

200 g of sugar

60 cl of water

20 g semi-salted butter

10 cl cream

Cooking time: 25 min
Preparing the cracker.
Mix butter, flour and brown sugar.
Spread between two sheets of parchment paper and set aside in the freezer.
Prepare the choux pastry.
Heat milk, butter, sugar, salt in a saucepan and bring to a boil.
Add the flour and stir over the heat to dry the dough.
Add the eggs one by one off the heat to obtain a smooth dough.
Place the dough in a pastry bag and form medium sized cabbage on a baking sheet.
Place cracker discs on top.
Bake for 20-25 minutes at 180°C (gas mark 6).
Prepare the salted butterscotch.
Put the sugar and water on medium heat.
Without stirring, wait for the mixture to form a caramel.
As soon as the caramel is light-brown in colour, add the semi-salted butter. Stir.
Add the cream.
Pour the caramel into a container. As it cools, it will thicken.
