25 cl thick fresh cream NOT lightened

300 g dark chocolate pastry

180 g milk chocolate

200 g unsweetened cocoa powder

Cooking time: 10 min
Caramelize the sugar in a saucepan, then add the butter.
Bring the cream to the boil and pour it into the caramel-salted butter mixture, stirring constantly.
Remove from the heat and add the chocolate in pieces until the cream is smooth and shiny.
Pour into a salad bowl. Leave to cool and refrigerate for 2 to 3 hours.
Take a spoonful of dough and shape a small truffle. Roll the truffle in the chocolate.
Work quickly so that the chocolate does not melt.
