125 g sugar

125 g cream

12.5 g semi-salted butter

Cooking time: 10 min
Pour the sugar into a saucepan and add a tablespoon of water.
Leave to brown, but do not put any utensil in the pan (the difference in temperature can make the caramel miss), so stir the pan by simply tilting it in a circular motion.
When the caramel has a nice colour, add the liquid crème fraîche and bring to a small boil.
When the mixture is homogeneous, simply stir by tilting the pan.
Add the salted butter cut into small cubes and leave to cook over a very low heat for a few minutes.
Put in a pot or pour directly on what you wish to garnish.
