Number of persons
for the shortbread dough:

250 g flour

125 g butter

70 g sugar

2 egg yolks

5 cl of water

1 pinch of salt

Cooking time: 20 min


Blanch the yolks and sugar with a whisk and relax the mixture with a little water.
Mix the flour and the butter cut into small pieces with your finger to obtain a sandy consistency and to ensure that all the butter is absorbed (!!!! You have to be quick so that the mixture does not soften too much!).
Pour the liquid mixture in the middle of the "sand".
Incorporate the elements quickly with a knife without giving them body.
Form a ball with the palms and mill 1 or 2 times to make the ball more homogeneous.
Line a 25 cm diameter mould with the dough, fill it with baking paper and dried beans.

Bake for 20 to 25 min at 180°C (gas mark 6).

Bring the milk to the boil with the chosen flavour (vanilla or other).
Work the egg with the sugar until the dough makes the ribbon, add the flour.
Pour the boiling milk over the mixture, stirring well.
Return to the pan on the heat.
Cook while turning very carefully.
Remove after boiling.
Pour the cream over the tart base and arrange the halved strawberries nicely.
