300 g flour

1 bag of baker's yeast

60 g cane sugar

1 vanilla flavouring

12 cl milk

20 g semi-salted butter

1 cinnamon

1 egg

In a saucepan, heat (over low heat) the milk with the butter cut into pieces without boiling, then add the sugar and the vanilla flavouring.
Remove from the heat and leave to cool.
In a bowl, mix the flour with the baking powder and add the beaten egg.
Add the still-warm liquid mixture to the bowl and stir until the dough comes away from the bowl, it should be elastic and less sticky than at the beginning. (Kneading by hand may be necessary).
Form a ball and cover the bowl with cling film, let stand for about 1 hour at room temperature.
Once well assembled, degas the dough in order to expel air, crush with the palm of your hand, stretch etc..
Spread the dough between two pieces of cling film to prevent it from sticking to the roller, it should be about 3cm thick, then using a cookie cutter, cut out small circles of pasta. Place on a baking sheet with baking paper.
Leave to rest for a further 30min, so that the dough can swell, then put in the oven for 12min at 180°C.
In a small plate, prepare the cane sugar/cinnamon mixture which will be used for the top of the fritters.
Once cooked, soak the top of the doughnut in boiling water for 2sec (or all the way through) then roll the wet part of the doughnut in the sugar and cinnamon.
