1.5 kg of chicken

40 cl coconut milk

2 fresh green peppers, deseeded

2 tablespoons coriander seeds

1 teaspoon cumin seeds

1 teaspoon shrimp paste

1 spoon of crushed garlic

1 spoon of chopped ginger

2 teaspoons powdered sugar

2 teaspoons of oil

3 tablespoons peanut butter with pieces

2 tablespoons of fish

Cooking time: 1 h

Cut the chicken into several pieces and put them in a saucepan with the coconut milk and a cup of water, bring to a boil, cover and lower the heat.
Simmer for 30 minutes, until the chicken is tender.
Make the coriander, cumin and shrimp paste in a wok or non-stick pan until they release their aroma, then grind them with the garlic, ginger and sugar.
Cook the resulting condiment paste in oil for 3 minutes. Remove the chicken with a slotted spoon and set aside. Pour the cooking juices, together with the chillies, over the condiments.
Add the peanut butter, stirring until it dissolves in the sauce.
Return the chicken and cook for 10 minutes over low heat. Add the fish sauce and lemon juice and serve with rice.
