100 g 70% dessert chocolate

100 g dessert milk chocolate

100 g semi-salted butter

125 g whole almonds

125 g whole hazelnuts

150 g sugar

50 g of water

1) Prepare a caramel with water :
In a saucepan, put the 150 g of sugar and the 50 g of water.
Heat over high heat, and let it boil gently until the caramel turns golden.
NB: Never touch a caramel! During cooking, take a brush and wet the inside edges of the pan a little.
2) The praline :
As soon as the caramel is golden, remove from the heat and add the hazelnuts and almonds.
Cover well and place this sticky ball on a silicone sheet.
Leave to harden in the open air for 10 minutes.
Put everything in the blender bowl and activate the pulse function 6 times 30 seconds. Use the spatula to distribute it evenly.
Then let it run at maximum speed until a very fine powder is obtained (about 5 minutes).
3) The chocolate:
Break the chocolate into small squares.
Gently melt the chocolate in a bain-marie.
Add the melted chocolate to the preparation.
Mix at maximum speed for 2 minutes.
4) The semi-salted butter:
While the blender is working on its own, melt the butter gently and pour the melted butter into the preparation, taking care not to pour the whitish material that has separated from the butter. You have thus used clarified butter, which is less toxic to your health.
5) End of the recipe.
The recipe is finished when you have obtained a smooth dough in the mixing bowl.
It should be pretty good!
