For the mixture:

2 apples (preferably very fragrant, like melrose or the more common fuji)

1 pinch of allspice (cinnamon, clove, nutmeg, ginger)

1 knob of butter with a grain of salt; or if you prefer mild butter

1 tablespoon of heavy crème fraîche

1 tablespoon brown sugar or sugar (to taste)
For the dough:

75 g flour

50 g brown sugar (or sugar as found)

50 g soft butter

Cut the apples into cubes, and melt them (over medium heat) in a knob of salted butter, with a tablespoon of brown sugar and a tablespoon of water.
Once the apples are slightly softened, add the right pinch of 4 spices. Mix and set aside.
Prepare the dough:
This paste is quite sweet so according to everyone's taste you can reduce the amount of brown sugar indicated. Mix sugar and flour, then add the diced butter. Sand the dough with your fingertips.
Add the spoonful of fresh cream to the apples and mix.
Divide the fruit into ramekins that are filled 3/4 full.
Then cover with the sandy dough.
Put in the oven for 25 minutes at 180°C (Th 6).
