5 tart apples (canada, pink lady, fuji...)

225 g of flour

125 g brown sugar

100 g soft butter

75 g salted butter

75 g caster sugar

10 cl whipping cream (optional)

1/2 teaspoon cinnamon

1 egg yolk

Mix the sweet butter with the brown sugar and then the egg yolk.
Add the flour and the cinnamon, rubbing the preparation between your palms to obtain an irregular sand. Set aside in the refrigerator.
Peel and cut the apples. It is not necessary to make quarters.
Melt the salted butter in a large frying pan (or in 2 times if not available) and add the apple pieces, then the caster sugar.
The heat should be high so as to caramelize the sugar and apples.
Once the apples are golden but not cooked, transfer the contents of the pan to a buttered dish or ramekins.
Sprinkle with whipping cream, sprinkle with sand and put in the oven for 35 minutes at 180°C.
