4 egg whites
200 g dark chocolate
50 g almond powder
50 g flour
80 g soft butter
80 g icing sugar
20 cl whipping cream (liquid cream)
1/2 teaspoon baking powder
1/4 teaspoon salt

Prepare the ganache:
Heat the cream in a small saucepan. Break the chocolate into a large bowl and cover with the boiling cream. Wait a few moments and then stir until the mixture is smooth.
Preheat the oven to 180°C (gas mark 6).
Break the egg whites by beating them with a fork to homogenize them, but do not beat them. Add the powders (almond powder, flour, icing sugar, salt and yeast) previously mixed.
Prepare a hazelnut butter:
Blond the butter over a low heat until it takes on a nice golden colour. Let it cool a little and then add it to the egg-white powder mixture before adding it to the ganache.
Mix gently.
Bake in a very hot oven for 20 to 30 min depending on the size of the moulds (12 min for the silicone type mini financier moulds): the cooking is finished when the surface cracks.
