200 g dark chocolate dessert

5 g soft butter

125 g chestnut cream

1 pinch of cinnamon

1 teaspoon of liquid vanilla

1/4 teaspoon ginger

1/4 teaspoon cardamom

2 tablespoons orange juice without pulp (not concentrated)

6 egg whites

2 tablespoons of sugar in a blender (or in an electric coffee grinder, taking care to clean it and dry it well beforehand, you can also avoid cleaning it, the aroma of the coffee can be welcome)

Pour the egg whites into a large bowl.
In a small glass bowl, melt the chocolate for 2 minutes in the microwave (stop after 1 min, stir and put in the oven again).
Take the chocolate out of the microwave and stir in the butter, stirring constantly.
In a bowl, pour the chestnut cream, add the cinnamon, vanilla, ginger and cardamom, stir well, then add the orange juice.
Pour the chestnut mixture into the melted chocolate bowl.
Whisk the egg whites until stiff, adding a few drops of lemon and a pinch of salt. When the snow is still very soft, add the mixed sugar and finish to make a very firm snow.
Pour 1/3 of the egg whites into the chocolate mixture, stir in gently from bottom to top, add another 1/3 of the egg whites, then finish with the last 1/3, still stirring gently.
Pour into the salad bowl or final presentation bowls, cover with plastic film and place in the fridge.
To be made a few hours in advance.
Do not hesitate to change the flavour of this mousse or add pieces of marron glacé, candied oranges, etc.
