25 cl milk

80 g sugar

30 g flour

3 egg yolks

80 g soft butter

80 g whipping cream

80 g of chocolate with a minimum of 60% cocoa




Preparation chocolate mousseline cream
Prepare a custard: in a bowl, mix the sugar and flour. In another bowl mix the milk and egg yolks. Mix the two preparations.
Thicken over low heat while stirring constantly.
Make a ganache: heat the whipping cream in a small saucepan and add the grated chocolate. Mix well.
Mix the pastry cream, still hot, with the ganache. Cover and cool.
As soon as the cream is fresh: whip it until it has the consistency of mayonnaise.
Beat the butter into an ointment.
Mix the cream and butter and whip until it has the consistency of a mousse.
