Ingredients chocolate truffle christmas chestnuts
Number of persons

1 kg of whole peeled chestnuts, frozen (or 1,700 kg of fresh chestnuts for cooking)

150 g dark chocolate

100 g soft butter

4 tablespoons of milk

2 packets of vanilla sugar

200 g caster sugar

2 tablespoons amber or white rum

Cooking time: 30 min
Cook the chestnuts in a large pot of boiling water for about 12 minutes after the chestnuts have resumed simmering.
Melt the dark chocolate in a bain-marie with the butter.
Drain the chestnuts, and grind them in a vegetable mill or mash them with a purée press, do not put them in a blender to keep a slightly "rustic" texture.
Then add the milk, powdered sugar and vanilla sugar. Mix well and add the rum according to taste.
Then add the chocolate/melted butter and mix well to obtain a homogeneous "purée".
In a cake tin, place cling film on the bottom and the edges (to make it easier to remove from the tin) and fill the tin with the mixture.
Store in the refrigerator and leave to set for at least 12 hours.
Turn out of the mould, the truffle is ready!
The most greedy (of which I am one) will coat it with dark chocolate and serve it with a homemade custard.
