200 g fine pastry chocolate

100 g soft butter

100 g icing sugar

1 sachet of vanilla sugar

10 cl thick crème fraîche

1 egg yolk

Liqueur (quantity and flavour according to taste)

Unsweetened bitter cocoa

Melt the chocolate in a bain-marie, without adding anything, or in the microwave with 4 tablespoons of water.
When the chocolate is soft, add the soft butter, icing sugar and vanilla sugar. Mix well, off the heat, until it is well blended.
Add the crème fraîche (it is very important to use heavy cream), the egg yolk and the liqueur, gently.
Leave to rest in the fridge until it hardens (2 to 4 hours).
Put the bitter cocoa in a soup plate. Take the desired amount of preparation with a small spoon and roll it in the palm of your hands, then in the cocoa.
